Strawberry season arrives at different times for all of us, depending on the region and climate in which we live.  June, however, is the primetime strawberry slot for many, with festivals being in full-swing in small towns across the country to celebrate this delectable fruit.  

Prize-winning strawberry recipes abound, since there are seemingly endless ways to enjoy this versatile berry--in salads, smoothies, jams, salsas, and desserts.  It's nearly impossible to fit in all the ways you can serve strawberries within such a short harvest season, so you have to be choosy.  


Sure, you can buy strawberries at the grocery year-round, but using fresh strawberries during peak season is when your taste buds will really savor the fireworks of sweetness.

Strawberry pie is a "must" for your menu at least once during the season, but there are so many pie recipes circulating online, which one is most deserving of the splurge of caloric intake?

Ditch Classic Crusts For The Best Strawberry Pie

A Crisco pie crust is the classic, go-to recipe for most fruit pies, but it doesn't do justice to fresh strawberries.  Why?  Crisco pie crusts are so good that their taste competes with the strawberries instead of allowing the strawberries to shine in the spotlight.

Our unique crust for fresh strawberries is delicious, but it accents the berry flavor instead of overshadowing it.

My family always jokes I could just leave out the strawberries and let them gobble the crust, homemade gel, and Cool Whip--the flavor combination is that good!


Don't Take Shortcuts On This Strawberry Pie

Everyone is busy these days and looking for shortcuts to make meal and dessert prep more efficient.  While our strawberry pie recipe comes together in a snap, don't be tempted to cut corners.  Using canned pie filling or bags of strawberry gel will completely dilute the restaurant-quality flavor.

The Best Strawberry Pie Recipe EVER

Without further ado, here is the recipe for the best fresh strawberry pie you will ever eat:

CRUST:

1 1/4 cups flour
2 Tbsp. sugar
1/2 cup butter, softened
1 egg yolk

DIRECTIONS:

Combine the flour and sugar and then work in softened butter with a spatula or pastry blender.  Add egg yolk and stir until completely mixed.  Press dough into a 9-inch pie pan and bake at 350 degrees for 15 minutes until slightly golden.  Cool.

STRAWBERRY PIE FILLING:    

3 Tbsp. corn syrup
1 cup sugar
3 Tbsp. cornstarch
1/2 tsp. salt
1 cup water
3 Tbsp. strawberry powdered gelatin (half the box)
2 lbs. fresh strawberries, cleaned and sliced in half
Cool Whip

Combine the first five ingredients in a medium saucepan over medium-high heat, stirring continuously with a whisk until mixture thickens, about 5 minutes.  Add strawberry gelatin and blend until dissolved.  Cool.

Place berries, cut side down, in pie crust, overlapping and layering berries once the bottom crust has been covered.  Pour gelatin mixture over berries until all of them are covered and gelatin mixture begins to rise up to the top edge of your crust.  Chill.  Top with Cool Whip and serve.  Approximately 8 servings.
